Bake 18: Apple and Dried Cranberry Loaf

This is actually the cake I made to take with us to Derbyshire. I figured it was solid enough to travel well, it lasts wonderfully, and it has enough fruit in it for me to not feel too guilty about our holiday diet. Apple & Dried Cranberry Loaf


  • 2 large eggs
  • 3/4 cup caster sugar
  • 2tbsp vegetable oil
  • 1 1/2 cups plain flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp bicarbonate of soda
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 2 cups chopped apples
  • 1 cup dried cranberries
  • 1/2 cup chopped pecans or walnuts


  1. Mix flour, baking powder, soda, cinnamon, salt and sugar in a bowl
  2. In another bowl, beat eggs and oil together
  3. Add egg mix to dry ingredients and blend
  4. Stir in fruit and nuts
  5. Tip mix into greased and lined loaf tin and bake at 180°C for an hour, or until cooked
